The Morita Chile (Chile Morita) is one of two types of chipotle peppers. Made from smoking and drying red-ripe jalapeño peppers, they have a mild fruity, smoky flavor and medium heat level. Morita chiles are the variety used in the canned chipotle in adobo sauce. Their smoky, earthy flavor is popular all over Mexico, especially in Puebla and Veracruz, where they are used in tinga poblano, a dish of shredded meat for tacos and tostadas, and salsa macha, a fried chili oil condiment with garlic, nuts and seeds.
