Whole Achiote (Achiote Entero), also known as Annatto, are bright red seeds of the achiote tree that are used throughout Latin America to give dishes rich yellow-orange color and earthy, peppery flavor. In Mexican cooking, ground achiote is mixed with garlic, oregano, chiles and spices into a paste for rubbing on meat, including the slow-roasted pork dish, cochinita pibil.
