Blueberry Pie

1 whole pie crust
4 cups fresh or frozen blueberries
3 tablespoons All purpose white flour
1 cup sugar
1/8 tsp salt
1 tablespoon lemon juice
1 tbsp butter

Preparation

Preheat the oven to 425°F.

Line the pie pan with half the pastry dough. Mix the flour, sugar, and salt in a large bowl. Wash and pick over the blueberries if you are using fresh ones, if you are using frozen berries, it is not necessary to defrost them completely. Add the blueberries and lemon juice and toss well.

Pile the mixture into the lined pie pan and dot with the butter. Roll out the top crust and drape it over the pie. Crimp or flute the edges and cut several vents in the top.

Bake for 10 minutes, then lower the heat to 350°F and bake for 30 - 40 minutes or until the top is browned.
