Italian Tossed Salad

Ingredients

salt to taste
1 garlic clove, peeled
1/4 cup olive oil
1 tablespoon lemon juice, or wine vinegar
1 tbsp mayonnaise
1 tsp dry mustard
Freshly ground pepper, to taste
1 head of romaine or other lettuce, cut into bite-size pieces
1 fennel bulb, cut into julienne strips (optional)
1/3 cup walnuts, coarsely chopped or 3 anchovy fillets, chopped fine
1 tbsp capers
2 hard-cooked eggs, sliced
parmesan cheese grated (optional)

Preparation

prinkle the bottom of a salad bowl with salt and rub with the garlic. Add the oil, lemon juice, mayonnaise, mustard and pepper and stir with a wooden spoon until well blended.

Add the romaine, fennel, walnuts, capers and sliced eggs and toss lightly with a fork and spoon. If desired, sprinkle with grated Parmesan cheese.
